I personally would recommend against complicating things with Karibiner-Elements… I'd completely uninstall it and just use System Prefs "Modifier Keys…" I've never seen the System Prefs swapping approach not work, when used in isolation. That said, the "right" way to swap the keys would be to reprog...

Yeah… black keyboards are cool, but I think they look bad when paired with gray-background keycaps.
I've read that it's difficult to put white legends onto black keycaps with dye sublimation. So I think they used to essentially paint the legends on, and they tended to wear off over time.

Repurposing a bakery cooling rack is a great idea… did you have it shipped? I built shelving out of wood. Unicomp seems to offer a lot of parts & other stuff that aren't listed on their website. I'd contact them. I like Unicomp keyboards a lot, and I agree that 1.25U bottom row modifiers are best. But I'm not a fan of the Spacesaver M in particular because I don't like that I have to hold down Fn to use...
