Do all three of the switches show a similar graph? i.e. actuation point seems to be too far down. Possibly it's 2.5±0.5 mm, which would put this within tolerance, and the orange switch slightly out of tolerance.

Also, blue and white differ in peak force by around 20 cN, which makes me wonder how much of this is to do with tolerance, and how much of this is deliberate. There are "white Montereys" too (albino clicky), so maybe those are lighter in force than the blue ones. They're fairly rare, so it might be some time before they get measured.

I never took the SMK colours too seriously due to how weird it gets, but maybe there is method to it. Here's another blue type:

We even get the part number, KKM0611-0001 — but we don't know anything more about them, and they are expensive. You can get them in much smaller quantities but the unit price remains high ($5.37/pc for 30):

I believe I have the yellow and blue in a keyboard somewhere (may take me a while to find them...).

These switches seem to have heavily inspired the new cherry mx low profile switches. When compared to the smooth versions of cherry switches (the retooled ones), are the smk smooth? Are they wobbly?

Sorry to go off-topic, but do you have any more information or references on the albino Montereys? I would be interested in learning more about them.
