I have bought a cherry 1813 recently (please notice that this is not a dolch board) but come with dolch caps
So, why cherry produce different board in same product number

Well, if those dolch caps bother you, I would buy them off you

Why did Cherry do anything that made no sense? Why do some of thier product codes break thier own conventions, like have the part HAU but with blue switches or something, or those g86 with mx browns... there is a lot of weirdness, nothing to do but roll those eyes.
