Are keycaps from g81-3000 LUNDE (usb) compatible with MX switches? Apart from space and modifiers?

yes. Modifiers will need some dremel work, but the rest will fit.

Incompatibility only applies to PBT version with the inbuilt stabilizer, POM use same normal keycap same as MX versions except the 1.25 on the bottom. As Cheap as G80 often are on ebay you might be able to get G80-3000L**DE for similar cost if you haven't gotten anything yet and get full compatible keycaps.

How can you tell pom from pbt without pulling a cap?

Only white is PBT and only black is POM.

Hmm the light&medium grey caps on the peacock G81 boards were lasered
pom (and were normal without stabilizers).

The older production thick PBT has normal keycap that is MX compatible. They changed it sometime more recently though I am unsure when exactly. There are a few things you can look for to help on that, such as the font which has the nice Cherry font like doubleshots, and if there is side printing on the print screen and pause keys.
But as a general rule most G81 you are going to come across in hellgrau PBT from current production will have the build in stabilizer system.

Oh, so those aren't POM but thick PBT? I was construing pom from umm what information was it again... ah i think from a current production G80-3000 which has thin PBT caps with 'PBT' printed inside with the excpetion of the larger keys like enter, which are thick but nothing printed inside.. so i thought: nothing+lasered=POM. Well, admittedly not very scientific :p
Edit: oh and also from how the surface felt.

I actually have POM keys that have PBT marking inside, they used same molds for both back then. Cherry PBT don't have a rough nasty texture like some others which is why I like them so much.
