There are 18 usable pins. TX/RX are PD3/PD2. The only ones that are not usable are VCC/RAW/RST/GNDs.

A DPDT (on-off-on) switch would work. Just wire the leds to the other set of terminals.

You'll need more pins if you want to do a 104/5 full sized keyboard. 18 pins in a 9x9 matrix (which maximizes possible keys) can only do 81 keys.
