So these switches have two pins to power them and two output signal pins, so one output pin has to be 0V and the other is what? I mean is the output signal analog or digital? If it was digital, then the second output pin would just send the input voltage when a key is pressed, but if it is analog, ...

They use a very precise mechanism which would be VERY hard to deal with if you don't actually know how to make such a keyboard, which is about 99,99999% of this community, so I doubt it will ever be usable.
