I'd recommend the White switches as they'd probably be the most familiar coming from MX blues

Just glancing over the photos I didn't even realize the case was cut! Thought you did a case swap or something :p

I believe those are made by Tai-Hao, They made a lot of Alps stuff back in the day, those gamery keycaps came with keyboards that had APC switches, like you said. And APC are from Tai-Hao I reckon. I'm not sure as I'm pretty unfamiliar with phone lines in general. There's a little paper slip inside that says it can only be used on analog lines.
